Too much oil
When are those home grown, self-proclaimed chefs gonna learn that oil is the worst thing one can use for a marinade???!!! Oils and grease block pores and spaces between muscle fibres preventing spices and flavors to enter deep into the meat. The best marinating compounds are acids (lemon, orange and lime juice, vinegar, wines, especially tawny port, muscat, shiraz almost all red ones), sauces like soy, fish, oyster, sugar, salts (table salt, epsom) and alclaine (baking soda), herbs and powdered onions and garlic, turmeric, peppers & paprika. If you wanna use oil or butter use it after marinating the meat for at least 2-3 hours (preferably overnight or even 48 hours if the meat is super fresh) as an ingredient in a spice rub mix and leave it in a fridge for minimum 2 hours. You will thank me later.
I like this one, haven’t tried it but I can imagine the flavors!! Really should add some garlic to the mix as well 😊
A Greek marinade without garlic is unheard of!
Typically my grandmother would make a slice in the lamb and insert a piece of garlic and oregano.
Did this in several places.
Gotta have garlic in the mix for lamb chops .

I would add the juice of orange, lime, and italian seasonings to the marinade.
If you are going to make it Greek, at least use fresh ingredients. Stay in the Midwest, your cooking is trash.
I didnt have lemon at the time i used a table spoon of apple cider vinegar, an instead of olive i used grapeseed oil an more added seasonings. Came out great!

So many people do not know how to zest properly. The tool on top of the lemon, not the lemon on too of the tool. This way you'll be able to see what you're doing and stay away from the white
Don’t ever call a recipe Greek, if it has oregano that’s not Greek. To make anything Greek with oregano it must have Greek Oregano. Don’t embarrass us please 🇬🇷
What's the difference between a "marinade" and a "finishing marinade"? How about yogurt and garlic? Can I add those?

If you ever make meatpie with rice try to find instead of oregano marjoran. But keep the quantity limited. One teaspoon for a small pan or soup spoon for a large one. You will find it's aroma and taste superb. Thats how they make the meatpie on the Ionian Islands in Greece.
Garlic and yogurt
Made this for the family and they LOVED it. Even my picky father in law.
You could add some thyme, rosemary and garlic there too. But still a decent marinade.
