Ingredients
1 leg of lamb, bone-in, about 7-8 pounds
10 or more garlic cloves, cut into slivers
2 onions, quartered
salt (about a half teaspoon per pound)
freshly ground black pepper
2 sprigs of fresh rosemary
1 cup of water
1/3 cup fresh lemon juice
1/4 cup olive oil
2 teaspoons dried crushed oregano,
Instructions
Preheat the oven to 350 °F, 180 °F.
Use a sharp knife to cut slits into the leg of lamb. Stick the garlic slivers into the slits.
Place the lamb in a large roasting pan.
Combine the lemon juice and olive oil together and pour it all over the lamb. Season the lamb on both sides with salt, pepper, and oregano.
Add the rosemarry sprigs and the onions to the pan. Pour the water into the pan.
Cover the lamb with a sheet of parchment paper and then tightly with aluminum foil.
Bake for 3-4 hours or until the meat is soft and almost falling off the bone.
Remove the foil and parchment and place the pan back into the oven and onto the middle rack. Turn the broiler element on and broil for 5-10 minutes or until the top is golden. Keep a close eye on it so that the lamb does not burn.
Serve with roasted lemony potatoes, tzatztki, and Mediterranean Rice pilaf. Enjoy and Kali Orexi!
Notes
Marinate the meat and insert the garlic cloves the day before serving. Keep it refrigerated and allow the meat to come to room temperature before roasting.

Bella Dimitra, I made a similar dish for the first time this Easter. Also learning from my grandparents—try placing everything into one roasting pan (potatoes on the bottom). You will be amazed with what transformation those ‘taters go through—becoming infused with all the delicious drippings. Pulling the meat, tenting aside and placing the ‘taters back in the oven at 450° for 20+- minutes, yields infused and roasted ‘taters as a magical side dish.
With other roasts I have done in this manner, some comment the ‘taters are their favorite. Thank you for your contribution ❤

Yeah – that's not "lamb" by a long shot. It's mutton or sheep. Lamb leg is at most 1lbs. What she has in the pan is a horse leg. Don't be cheap and buy real lamb.
Can we use a roasting bag like we can with a turkey instead of foil?
Hello Dimitra ,nice video and nice attempt but this not Greek style ,this is my opinion for Greek cuisine !
Fist of oll on the lamp we don t add garlic and onions ,we do it on the pork !!!
After we cook in the over the potatos with the lamp together,without oregano because it is bitter,but with a little mustard on the potatoes,oregano only at the end and only on roasts !!!
Don t forget if you use onions you have to saute it in a pot ,not in the oven just !

So for this dish without potatoes you add the garlic inside the lamb, but if you add potatoes you only put the garlic at the bottom of the pan?

The thing I love about leg of lamb is that you can just throw it in the oven, turn it once and it comes out just delicious with virtually no effort! And yours look fantastic, by the way!
