Trahana soup (traditional Cypriot soup) is the best thing to eat when it is freezing cold outside like it is today.

I remember coming home from school after playing in the snow and my Mum giving me a bowl of this deliciousness with a sprinkling of black pepper to add extra heat and warm up my belly.

My fabourite way to eat trahanas is topped with black pepper and dried toast cut into cubes. The base of the toast goes soggy and the top stays crisp because the soup is think and doesn’t soak through, it doesn’t sound good but trust me on this one, once you try it, you will love it too.

There are so many textures in this soup, the small grains of the trahana, silky, chewy halloumi, velvety liquid soup and crisp and soggy bread. Your texture tastebuds will be having a party and I haven’t even started on the flavour. I will leave that for you to try and come back and let me know what you think of the flavour 😉🙃😊

INGREDIENTS
•400g trhananas
•1L water
•1 1/2L water
•1 chicken stock cube
•225g halloumi (cubed)
•Black pepper (optional)
• toast cut into squares (optional)
