the whole feta block derives from the time when certain things had to be sold by portion and of certain weight in order to counter thievery that was flourishing in those times, other example was the baker that had to weight the bread lof and add a slice if it weighted less than what it was supposed to. So the purpose of the one piece feta block was to make sure that the customer got what he paid for and in case of an sudden audit from the dedicated authorities it would be easier to weight it that way than collecting the crumbles, besides, back then ordering a salad did not include feta, if you wanted feta it was a separate order
as a Greek you don't even come close to taste good quality Greek food for that you need to go out of Athens

The block of feta on top, instead of crumbles is to assure customers you're not serving them someone else's leftovers.
Tomatoes, onion, bell pepper, cucumber are always in the Greek salad. Never lettuce

Johnny I forgot to ask, is the graffiti situation just as bad in Crete and the other major islands or is it mainly problem around Athens and the big cities in mainland Greece?

great video reminds me of a trip to greece many years ago. I met up with some Americans 2 bros & 1 bros girlfriend. Thru them we met a greek fellow who would show movies in tavernas in remote towns in Crete. He took us on one of these movie nights it was so much fun! The next night I said I would pay for dinner and he took us to a town about 1 hour from Heraklion where he said he knew the owner and the food was much better. We had steak (it was goat) and it was grilled. The goat steak and the sides were wonderful along with the delightful company was a memorable experience I still think about after all these years. Johnny some of the commentors make remarks about whether you "got lucky or what" it really isn't important in my opinion, but along the way you a meeting of the minds with locals and fellow travelers that's important. I still keep in touch with people I met on that Greek trip many years ago.
