Greek Freak Tzatziki with Fresh Pita
Ingredients:
For the Greek Freak Tzatzik
1 cup Greek yogurt
1 medium-sized cucumber
1 lemon, juice and zest
1 Tbsp Spiceology Greek Freak seasoning
4 cloves of garlic
1 Tbsp freshly chopped dill
1 Tbsp olive oil
For the Pita
6 tbsp Greek yogurt
235g bread flour
3/4 tsp salt
1.5 tbsp olive oil
6 Tbsp warm water
1 tsp dry active yeast
1/2 Tbsp sugar
Method:
– In a small bowl mix your warm water, yeast and sugar together, set aside for 5 minutes.
– In a large bowl mix your salt and flour together.
– Once your yeast mixture is foamy add it to your flour and add in your yogurt. Mix by hand in bowl until everything comes together then roll it out on your counter, mix for 5-8 minutes, the dough will be slightly tacky. Cover in a clean bowl and let rest and rise for 1-2 hours.
– While your dough is rising make your tzatziki. Grate your cucumber. Wrap grated cucumber in either paper towel or a cloth and get out as much moisture as possible, add to a bowl.
– Add in your yogurt, lemon juice, zest, grate your garlic, add olive oil, dill and Spiceology Greek Freak seasoning. Mix everything and season to taste. Place in the fridge to let your flavors marry together.
– Once your dough has risen, divide dough into 4-6 equal sized balls, rolling into balls, and let rest for 20 minutes.
– Preheat oven to 450°F
– Place either a pizza steel, stone or cast iron pan into your oven to also preheat.
– Roll your doughs out to a flat disk and place onto your hot baking surface. – Your pitas should start to rise in the middle and puff up, let them bake for 2-3 minutes then flip and bake for another 2-3 mins. Let your fresh pitas rest.
– Dip those fresh pitas right into your tzatziki or make some gyros!
