LIGHTENED UP EGG SALAD RECIPE with Greek Yogurt (No-Mayo!)
8 eggs at room temperature
2 tablespoons red onion finely diced
2 tablespoons celery finely diced
2 tablespoons fresh herbs, like parsley, chives, dill, etc., chopped
1/4 cup low-fat Greek yogurt
2 teaspoons Dijon mustard
1 teaspoon lemon juice
sea salt and black pepper to taste
INSTRUCTIONS
Bring a pot of water to a boil, and then gently lower the eggs in the pot using a large wooden spoon. Boil the eggs for 12 minutes.
Transfer the eggs to an ice water bath to stop cooking and cool completely.
Peel the hard-boiled eggs.
Add the chopped eggs to a mixing bowl with the red onion, celery, fresh herbs, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper. Stir all of the ingredients together until well combined.
Serve the egg salad straight from the bowl, with crackers, on a sandwich, or in a lettuce wrap. Enjoy!

The only key to perfect hard boiled eggs is boiling the water first, thats it. Julia Child showed how to do this over 20 years ago and it works flawless.
Boil water to 190+ degrees
Drop in 8-10 eggs
Let eggs boil for 3min
Turn off heat
Cover pot with eggs for 15min
Run eggs under cold water and peel. Perfect every time.

For more protein, I use both cottage cheese and yogurt. I also add mustard and capers for a deviled egg flavor. When I don't have celery, I use cucumbers for the crunch. Soo good. This is literally my breakfast every morning.๐

I've gotten more consistent results steaming eggs, rather than boiling water. Less water, more consistent cooking temperature and as many eggs as you can fit in the pot/steamer combo. 11:30 to 12 minutes depending on egg size

Salt is not the cause of high BP.. plenty of info on YT on this subject. Better types of salt available. Good cottage cheese is very hard to find. Most of it sloppy and tasteless. Buy a good farm produced cottage cheese and you will never go back to supermarket so called Full fat cottage cheese. Donโt eat low fat at all ever
There is nothing wrong with Mayo just make your own. No rubbish. Most of the goodness of yoghurt is taken out when pasteurised. Eggs and oil and lemon better for you.
