I know tzatziki normally uses grated/minced raw garlic, but I was wondering if I could use roasted garlic in this (raw garlic really burns my mouth, onions too 😢) do you think it would still taste okay or should I stick to raw garlic for this recipe?

I don't add lemon juice and instead add liquid gold (olive oil) and dill

I would advise adding the salt to the shredded cucumber before straining and letting it sit for a couple of minutes. This helps extract more water. I prefer adding some fresh dill and olive oil but to each their own. All in all keep it up μεγάλε 😉
