Yiayias Greek manestra or Greek orzo casserole! Manestra is Greek traditional comfort food similar to risotto made with orzo pasta, and tomato sauce either made with veal or chicken or lamb or even with sea food or just as simple as it is just orzo and some vegetables! Is always garnished with Kefalograviera or mizithra and is a staple in most Greek households! Today I’ll show my yiayias simple recipe for manestra ( orzo)

⚫️ingredients:
– 2 cups manestra (orzo)
– 1 big bag onion diced
– 3 garlic cloves diced / chopped
– 1 pepper diced ( optional)
– 1 tomato diced
– 1 cup tomato sauce
– 1 handful parsley chopped
– 1/3 of a cup olive oil
– salt & pepper
– 2 bay leaves
– 1,5 – 2lt water or or any broth of your choice
⚫️ instructions:
– into a large prepared casserole add the olive oil and sauté the onions, the garlic, the peppers ( which are optional) until are soften, and then add the diced tomatoes let sauté for 5 mins add the tomato sauce, the water/broth, salt & pepper, the bay leaves , the parsley the orzo and cook in medium heat by stirring constantly until the orzo is fully cooked so want stick on the bottom!
– when is ready you can garnish with freshly grated Kefalograviera or mizithra and enjoy
