🔹 3 pounds small yellow potatoes, scrubbed
🔹 1 tablespoon salt
🔹 ½ cup chopped red onions or shallots (about 1 small red onion)
🔹 3 green onions, trimmed and thinly sliced (white part and green part)
🔹 ½ cup chopped Italian parsley leaves
🔹 ½ cup chopped dill
🔹 ½ cup Kalamata olives, pitted and halved
For The Vinaigrette:
🔹 ¼ cup red wine vinegar
🔹 2 teaspoon Dijon mustard
🔹 1 ½ teaspoons dried oregano
🔹 2 garlic cloves, pressed or finely minced

Nightshades — potatoes, tomatoes, peppers, eggplants — kill my arthritic joints now, so I had to cut them out. I missed potatoes so much, I searched for a substitute and found cassava, called yuca around here. This recipe works GREAT with yuca! It's close in texture and I think even more flavorful than with potatoes! It's best cooked from fresh, of course, but so much easier to buy it already peeled and frozen.

This is terrific! I totally stopped eating mayonnaise about 30 years ago.
I put all those herbs in my regular salad with out potatoes ( I am diabetic and all my kids are low carb so they won’t be diabetic) so as much as I love potatoes in my salad they wouldn’t touch it 😢I am a Persian and we learn to make potato salad but we mix it with chicken salad and we call it olive salad . It got peas in it and pickles and lots chicken plus the potatoes and eggs 😂

We, in Greece, use olive oil and lemon juice. The herbs are every one’s choice.
