He was involved in a Callum Mackley goal as the Seagulls won 4-0, helped by a Shane Nti hat-trick.
Fellow Greek forward Stefanos Tzimas played for the same period and handed the ball over so Nti could compete his treble from the penalty spot.
Albion have given previous high-profile signings game time in the 21s, or the under-23s as it was, in recent seasons.
They include Moises Caicedo, who was given his debut for the club in a 3-1 defeat by Manchester City’s youngsters in February, 2021.

Julio Enciso introduced himself to the Seagulls with a goal against Liverpool under-21s three years ago as he beat Jarell Quansah to a long ball from Levi Colwill.
Enciso lobbed the ball over Harvey Davies, the goalkeeper who is now on loan at Crawley Town.
Kostoulas only joined the Albion squad for full training about ten days ago.
Tzimas had a brief outing behind closed doors versus Wolfsburg recently.
Under-21s boss Shannon Ruth told brightonandhovealbion.com: “Quite a lot over the years first-team players who are coming back from injury or need some minutes have asked to play and it just shows the level of professionals that we have in our first team that they’re very happy to come and be part of the group.

Kostoulas last played first-team football on April 2 in a 2-0 win over AEK Athens.
Tzimas also had an injury last season and has had to wait even longer for action.
His last game for 2.Bundesliga outfit Nurnberg was back on March 16, versus Greuther Firth.
