Ingredients:
For the Marinade:
* ¼ cup olive oil
* Juice of 2 lemons
* Zest of 1 lemon
* 4 cloves garlic
* 1 tablespoon dried oregano
* 1 teaspoon dried thyme or rosemary
* 1 tspb lemon and spice blend seasoning
* 1 tsp garlic powder
* 1 teaspoon paprika (optional)
* Salt and pepper to taste
For the Dish:
* 2 large boneless, skinless chicken breasts (cut in half lengthwise)
* 1 lb petite potatoes, cut into wedges
* Lemon slices, for roasting
* Fresh parsley or dill for garnish (optional)
🥘 Instructions:
1. Make the marinade:In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic,garlic powder, lemon and spice blend seasoning, oregano, thyme, paprika (if using), salt, and pepper.
2. Marinate:Add chicken breasts and potato wedges to baking dish. Pour in the marinade and mix to coat everything evenly.Let it marinate for at least 30 minutes (or refrigerate up to 4 hours for deeper flavor)
3. . Preheat oven to 400°F (200°C).. Add lemon slices on top.Roast for 30–35 minutes, flipping the potatoes halfway through.Broil for 2–4 minutes at the end for golden edges if desired.
4. Serve:Garnish with fresh parsley or dill. Serve hot with extra lemon wedges on the side.
* For extra flavor, spoon some of the pan juices over everything before serving.
