Honey Chilli Halloumi Wraps:
Makes 6 wraps
Ingredients:
200 g halloumi, cut into long strips
1 tbsp honey
Chilli flakes, to taste
Olive oil, for grilling
Yogurt Spread:
200 g Greek yogurt
1–2 tbsp finely chopped dill
2–3 garlic cloves, grated
Salt, to taste
To Assemble:
6 wraps
1 cucumber, chopped
1 tomato, chopped
Instructions:
1. Heat a grill pan with a little olive oil.
2. Mix the honey and chilli flakes in a small bowl.
3. Grill the halloumi strips until golden on one side. Flip, brush generously with the honey–chilli mix, and cook until well grilled on both sides.
4. In a bowl, mix Greek yogurt, dill, grated garlic, and salt to make the spread.
5. Warm the wraps. Spread the yogurt sauce, add cucumber, tomato, and grilled halloumi.
Roll tightly and secure with a toothpick if needed.
Side Salad (Dressing Packed Separately)
Ingredients
Green lettuce, chopped
Cherry tomatoes, halved
Feta cheese, crumbled
Dressing
1½ tbsp balsamic vinegar
1½ tbsp olive oil
1–2 garlic cloves, crushed
Salt, to taste
Instructions
1. Add lettuce, cherry tomatoes, and crumbled feta to a bowl.
2. In a separate bowl, whisk together balsamic vinegar, olive oil, garlic, and salt.
3. Pack the dressing separately if using for a lunchbox.
Apple Crumble Yogurt
Ingredients:
2 apples, peeled, deseeded, and chopped
4–6 tbsp rolled oats
2–4 tsp brown sugar (adjust to taste)
Cinnamon, to taste
300 g Greek yogurt
Vanilla bourbon
Date honey / honey / sweetener of choice
Instructions:
1. Add butter to a pan and cook apples with rolled oats, brown sugar, cinnamon, and ½ glass of water until the apples soften and the water evaporates.
2. Transfer the mixture to an air fryer or oven and bake until the oats turn golden and crispy.
Mix Greek yogurt with vanilla and sweetener.
Layer yogurt with the apple crumble. Chill before serving if possible.
