Celebrate Greek Independence Day with this golden, crispy cod in beer batter – just like we do on March 25th!
This traditional recipe is simple, delicious, and perfect with a side of garlic mash (skordalia).
Ingredients:
– 1 kg salted cod (desalted for 24 hours)
– 500 ml Alpha beer
– 300 g all-purpose flour (Agios Georgios)
– Oil for frying
Instructions:
1. Soak the cod in water for 24 hours, changing the water 2-3 times.
2. Mix the beer and flour until smooth.
3. Dip the cod pieces into the batter.
4. Fry until golden and crispy.
5. Serve hot with skordalia (garlic mash) and a lemon wedge.
Skordalia (Greek Garlic Mash) – Ingredients:
– 3-4 medium potatoes (boiled and peeled)
– 5 garlic cloves
– 1 tbsp garlic-water mixture (“skordostoupi” – garlic soaked in water)
– Salt to taste
– 100–150 ml extra virgin olive oil

Instructions:
1. Boil the potatoes until soft.
2. Crush the garlic and mix with a bit of water to make a paste (skordostoupi).
3. Mash the potatoes while still warm.
4. Add salt, the garlic paste, and olive oil gradually while mixing.
5. Mash until smooth and creamy.
