Darlinghurst newcomer Avia is running Re:Purpose, a monthly sustainability-driven dining series – and they’ve just announced the next star group of guest chefs.
Industry veterans Stefano Marano and Jack Reid (ex-Apollo) co-founded the restaurant in late November 2024. They’ve since dedicated the space to playing an active role in shaping Sydney’s dining culture.
With conscious dining at its heart, the duo launched Re:Purpose in March with the aim of turning food waste into art, while also raising conversations around sustainability. The program sees one guest chef collaborate with Marano in the kitchen for a long lunch on the last Sunday of each month. Diners will hear from guest chefs, who share introductions to the dishes and insights on how they’ve repurposed ingredients.

In April, Head Chef Jun Hwang of Surry Hills’ The White Horse joined the Avia team to serve up an Autumnal menu in partnership with Parisi, Misty Valley Mushrooms, Two Providores, and Organic Bread Bar.
The most recent event saw Head Chef Toby Stansfield of Redfern’s Attenzione devise a cheeky menu featuring grilled beef tongue with “yesterday’s bread sauce” and salted apple skin chutney; fried polenta edges with blackened citrus seasoning and abalone garum dip; and a tonka bean bread and butter pudding with “the other day’s tiramisu sauce”.
Now, Marano and Reid have announced the next run of high-profile, local guests: on 22 June Surry Hills Italian restaurant Cicerone will take over. July will feature Dear Saint Eloise, August will feature Jane, and Poly will join the kitchen in September as spring hits.
