If your mom puts the spinach in a cheesecloth and wrings it out, then do that thing! It will not be ok pressing it.

My husband's greek and we go to Greece for holidays every summer. Spanakopita is the thing I must have first every time we get there. Love it so much, but have never tried to make myself. But I might now 😊

in our Macedonian-Balkan tradition we don't pre cook the broad leaf spinach, just squeezed towel dried after washed. The phyllo dough is home made the old fashion way with only butter, not store bought since it has corn starch and other fats. The blocks of Feta like mentioned are Bulgarian in a brime.
The result is a fluffy ballooned raised crispy pie due to the steam from the spinach. Just two (different) cents. So many different rich traditions, so little time to try them all. ;))

Love this video, I use just olive oil and not butter, I know you like the butter I like the oil, I also add a little fresh oregano. Next day my husband likes it with a fried egg on top for brunch.

I tried this recipe as you describe, but didn't like the stringy spinach. I finely chopped up my spinach in a food processor, (and also added some cheddar to the mixture) and was very happy with the result!

Great recipe…thank you. But don't "say goodbye" to the roots! Stick them in a pot of compost, with just a tiny bit of white showing, and put them on your windowsill. Add water, and in a few days you'll see them growing back again. After two weeks they'll be as tall as they were originally.
I had never worked with phyllo dough before, but I followed the directions very carefully and it turned out incredible! A lot of work but really worth it.
