For God sake. We Greeks don't eat Humus or falafel. Why the hell do you think we eat Humus and falafel😂. It's not a Greek food. Nothing on this video is Greek. Also we cook our meat always well cooked. Never with blood. Nothing on this video is greek or cooked from Greeks as a traditional food. 😂Only the salad is somehow Greek.

Greek here. You NEVER grill with oregano. You grill first, then add the oregano. For grilling, only use dried oregano. For greek salad, you can use either fresh or dried. But I still prefer dried ❤

Look, msg is a combination of things, the Greek "msg" would be oregano and thyme. Try cooking with both, completely different experience
The thing with oregano, is you have to put it after the stake is done. It's taste goes bitter if it's cooked in high heat.
the application of dry oregano are endless. We have chips with oregano so i suggest to put some on after they pulled out either baked or friedand one mentioned we pick and grow our own and at each part of Greece is either different variety or due to climate soil difference

Olive oil is the greek msg if you get it right in quantity and treat it right.
Oregano is bitter so you need to put a wisely amount of it on your stake. Its is the cousin of rosemary and thyme. You can mix them for a good experience.
You should put oregano in the salad, if you had to put it on the stake, you should do so right at the end of grilling and before you let it rest
My favourite quick food is chicken covered in oregano and salt, put it in a pan and in 10 minutes is done!

Not sure about the rest of Greece but here in Crete, what they call oregano is actually wild Marjoram. Seasoning meat at the beginning with marjoram certainly adds a bitter note to it – which when lemon is used with it partly removes the bitterness. This is why many chefs would actually prefer using dried thyme.
The balance of dry brining the meat, searing it on charcoal, resting it – especially the pork and lamb used so often – then hitting it with fresh lemon on the plate is what brings out the flavour.
Personally, I see huge differences in quality between establishments and maybe 1 in 20 achieve what I believe to be the great Greek taste balance. Usually, the secret is patience and judicious use of fat.

Grilled meat, generally cooked well done if you're Greek. Seasoned well with salt pepper and dried oregano, and always finished with fresh lemon juice once cooked.
mmm neither of these is proper Greek oregano and it makes a difference. that oregano is tasteless. Visit the Greek islands this summer and pick it straight from the mountain. VAST difference in flavor and aroma. You would not be trying to figure out if there is a difference.

1)season meat with salt pepper. Before putting onto hot grill make sure meat is room temp.
2)Oregano is NOT used during grilling cause it burns, so use it at the end while the meat is still hot.
2) douse meat with room temperature lemon and the oregano will absorb all the flavors.
That’s all you need to know
For Greek style seasoning of meat you need dry oregano. And it has to be a good one. Most oregano sold in the states, even organic has absolutely no relation to greek oregano. Like 1/5 the potency and off smell. It's like microwave pizza vs some great pizza in a NYC place.If you want to actually do this "Greek oregano seasoning" thing: get good DRY oregano (try a Greek food's store, used by the Greek-American community). Use it on pork or even better lambchops preferrably (can use on cow steak but not very common). Or use it on fish (though the kind of fish it tastes great on is not big ocean fish or catfish, etc, we use it on things like gilt-head bream and meditteranean sea bass, which the US knows as "branzino"). It can be applied directly, or in a mix of olive oil, lemon and oregano, that's dripped/brushed on the meat/fish. We put dry oregano after cooking usually. For the mix (olive oil + oregano + lemon) we might put it both during cooking (not before) and after.
Falafel is NOT Greek

there is no humus and falafel in the greek cuisine! We have however regular meatballs that are fried and we usually make them with pork meat, eggs, breadcrumbs, onion, parsley and other herbs (very tastefull) !
