This healthy Chicken Salad with Greek yogurt dressingĀ comes together quickly and is a lighter take on traditional chicken salad! šš» It has tons of flavor and is an easy high protein meal prep lunch you can make ahead. I like to add it to a wrap or sandwich or have it with @Simple Mills Rosemary crackers! Use rotisserie chicken or leftover chicken to make it even easier.

INGREDIENTS
ā¢Ā 2Ā cĀ shredded chickenĀ (280g), I use rotisserie chicken
ā¢Ā 2Ā stalksĀ celery, choppedĀ (60g), ab ½ c
ā¢Ā ¼ cĀ red onion, choppedĀ (30g)
ā¢Ā ½ c grapes, quartered
ā¢Ā ¼ cĀ fresh parsley, choppedĀ (5g), ab 2 Tbsp chopped
ā¢Ā 2Ā TbspĀ walnuts, choppedĀ (15g), or nut of choice
~For Dressing~
ā¢Ā ½ cĀ Greek yogurtĀ (120g)
ā¢Ā 2Ā TbspĀ Dijon mustardĀ (30g)
ā¢Ā 1Ā large lemon, juicedĀ (30ml), ab 3.5 Tbsp
ā¢Ā 1 tspĀ garlic powder
ā¢Ā ½ tspĀ kosher saltĀ more to taste
ā¢Ā dashĀ black pepperĀ

DIRECTIONS
1.Ā Shred or chop the chicken, celery, red onion, grapes, walnuts, and parsley.
2.Ā Whisk the dressing ingredients in the bottom of a large bowl.
3.Ā Add the chicken and other ingredients and toss everything. Give it a taste and add more salt as needed.
4.Ā Hint:Ā to make shredding the chicken even easier, pulse it a few times in a food processor!Ā

ā¢Ā Meal PrepĀ – chop the chicken and veggies ahead of time and make the dressing. That way everything is ready to throw together at lunchtime!
ā¢Ā RefrigeratorĀ – store leftovers in an airtight container in the fridge for up to 3-4 days.

This WAS so good, ate it all in 1 1/2 days. Made it AGAIN today. Emma the greedy puppy taste tester liked it too.
Been looking for a recipe like this for awhile. Will substitute dehydrated cranberries for the grapes ( puppy has to taste test ) going to store now.
