Your super food seasonal Greek salad is the epitome of health! The nuts provide all the protein needed in a meal. The toasting brings out the flavor and crunch. I make a similar salad that I call a Broom salad because it sweeps the intestines. The basis of it is what you start with, which I haven't seen in any of your other salads, shredded green cabbage, shredded red cabbage, grated carrot & diced celery, and my choice of nuts. To that I add grated beet, sliced red onion, tomatoes, cucumbers, and a little lettuce. As for the dressing, almost the same some kind of vinegar, often lemon juice, olive oil, sometimes dijon, oregano leaf, pressed garlic, salt & pepper, no honey. Thank you!
Congratulations Diane on your weight loss and crediting the Mediterranean diet and lifestyle! One could argue that having a culinary show, like any chef, would make one gain weight, and that's ok when life is good. But you took the best from it. 👏
