GREEK CHICKEN ORZO BOWLS—another winner of a recipe that deserves to be in your dinner rotation STAT! The secret to why this meal is so flavorful comes down to the magic Greek chicken marinade, which interestingly happens to be the #1 recipe on kalejunkie.com. Crazy, I know. Instead of rice, I am using orzo because I was craving comfort food vibes. To save time you can buy store bought tzatziki, but I will tell you that making my tzatziki recipe is totally worth the extra 5 minutes. The bowls are topped with pickled onions and lots of crumbled feta, for the perfect combo of flavors!

Makes 4 servings
1 lb skinless chicken breast (if they are very thick, slice them in half)
1/4 cup olive oil
1 lemon, juiced
2 garlic cloves, mashed
2 tsp dried thyme
1 tsp dijon mustard
1 tsp salt
1 cup baby tomatoes, halved
2 Persian cucumbers, chopped
2 tb olive oil
1 lemon, juiced
Salt to taste
1 1/2 cups orzo, uncooked
1 cup tzatziki (store bought or make MY recipe on the blog!)
1 cup feta cheese, crumbled (I used @athenosfeta)
3/4 cup pickled onions
Garnish: Italian parsley, chopped
Cook orzo according to instructions on the box and set aside. Next, marinate the chicken. Add chicken to a bowl and coat with the olive oil, lemon juice, garlic, thyme, mustard and salt. Cover and marinate at least 30 minutes. Add 1 td of olive oil to a cast iron skillet over medium-high heat. Once the skillet is hot (very important), add the chicken. Do not touch for 5-6 min. Gently flip to the other side and pour the marinade into the pan, for extra flavor and to keep the chicken moist. Do not touch the chicken again. After 5 minutes, reduce heat to LOW and spoon the marinade over the chicken. Cover and let the chicken finish cooking, about 5 more min or until the internal temp is 165F. Remove from heat and let rest before slicing for the bowls. Meanwhile, cut tomatoes and cucumbers and toss with olive oil, lemon juice & salt. Last, assemble your bowls, with orzo on the bottom, salad next, chicken, and tzatziki. Add pickled onions and crumbled feta. Garnish with parsley and enjoy!
