I'm Greek and I live in Thessaloniki. The kakavia soup requires 3 fish. Fish tails, scorpion fish and small cod. And of course seawater.

Explanation of kakavia = the simplest/cheapest vegetable (potato onion celery) lemon olive oil salt pepper, and MOST important is variety of fishes that are unwanted/unsold at the market. Egg was luxury (love it if fish soup) but do not belong to kakavia . The traditional fishing boats are not able to travel long distances and even if cooking needed the spoiling of vegetables was not an issue in a matter of a day or 2. Remember engine, fridge and ice are relatively new addition and trust me kakavia is way older
