Adam, instead of cutting filo dough into strips and then layering two together, try just folding them in thirds. you then default to having three layers already. Plus, you don't end up wasting any filo.
Also, although the more traditional fold is a right triangle, an equilateral triangle fold (more commonly used in some ethnic varieties of samosas) holds more stuff. The first-fold of an equilateral triangle fold is a half-equliateral triangle. Then you just proceed down the strip to complete the equilateral triangle fold.

Spanakopita is good: you need to try kotopita (chicken), tiropita (cheese) and galatoburko (dessert).
Fling some water droplets off your fingers onto the baking sheet: helps in oven spring and flakiness of the philo😊
