Making a big batch and freezing is the way to go. Shakshuka size portions is perfect size for freezer.
I made this today, it's absolutely delicious, I wish I'd made double now. I will definitely make this again.
In South Africa we make a spicy version of this. I make a large batch, usually about 10 cans of the crushed tomatoes and 10 onions. I then freeze it in portions and use it with different proteins. Chicken, eggs, meatballs etc. Itβs so easy and time saving, and delicious.
