We asked Timos Ratiani, the young owner, where the name comes from:“Koel for me has a double meaning, but one common thread. It’s the name of a bird, very characteristic in India, whose sweet, melodic chirping leaves a subtle imprint—which is exactly what I wanted our space to do. At the same time, the word means ‘cool’ in Dutch, and that’s something that drew me in. If you step inside, you’ll feel it: the space is clean, fresh, light. You walk in and you breathe.”
A project with soul
Timos isn’t just a businessperson, he’s someone who carried the dream of opening his own place around with him for years. Someone who took risks again and again in the belief that hospitality is more than just a “job”; it’s a way of expressing love. Koel is his personal wager, and living proof that authenticity doesn’t need fanfares—just honesty.
As he notes: “If you asked me what my biggest dream was, I’d tell you it was opening a place of my own. I know it may sound simple, or even quaint, but to me this step means everything. I’ve had a hard life. For years, opening a place like this felt completely out of reach. Every time I thought about it, I’d force myself to come back down to earth and say ‘maybe this isn’t for me.’ But life worked out like it did, and I found myself at that same crossroads, ready to take once last swing at it—and I began. I’ve always taken risks; maybe because I had nothing to lose. And people say, ‘if you don’t take risks, you don’t drink champagne.’ Well, I’ve set my sights on that champagne. And for me, Koel is just the beginning. The challenges? There are so many. I’ve never done anything more difficult. It’s not just about managing the business; I’m present in everything, from production to service to logistics… But it’s mine. And that gives me strength.”

We asked him if there’s some secret ingredient for the space. His reply: it’s none other than genuine, effortless hospitality.
He explains: “What makes Koel in Argyroupoli stand out is obvious from the moment you step inside: our smiles. We smile a lot. We smile sincerely and deeply. We are genuinely happy that you’re here; that you trust us; that you support us. And do you know how I know that? Because our guests smile back… and their smiles go all the way up to their ears.

Regarding his inclusive vision, he shares: “The first ‘brick’ in building the vision for this place was simple: everyone belongs here. Everyone is welcome: whoever you are, whatever you wear, wherever you come from. I wanted this space to embrace you, not push you out. From the morning, when you drop in for a coffee or breakfast; to the moment you open your laptop to work; to the evening, when all you want to do is unwind with a glass of wine. I want Koel to respect your rhythm, and to adapt to it, without pressure. My favorite thing about this place—and it’s something I hear a lot from the people who visit—is that they feel safe. Yes, we’re on a central street, but at the same time, it feels like you’re an observer in a little sanctuary, far from the chaos of daily life. Koel is a place that is there, waiting for you, at any hour, on any day.”

“I’m proud of everything I create on my menu, because every dish and every drink is made with love, and with the guest in mind. I’m someone who loves to give—and I feel this is my opportunity to do so. Every time I prepare something, I do it with passion and joy, because I know the person who enjoys it will appreciate it—and that makes me happy too.”
What should you definitely try? The cinnamon rolls that have already become the talk of the town, the pistachio babka for those who don’t play around with breakfast, the soft cookies with their perfect texture and attitude, and the vegan focaccia with cherry tomatoes, peppers, and mushrooms—a savory revelation at any hour.
