INGREDIENTS
For the marinade
8 cloves garlic
3/4 cup (180ml) olive oil
1/2 cup (120ml) lemon juice
2 teaspoons Dijon mustard
1 tablespoon honey
1 tablespoon Greek dried oregano
1 teaspoon dried thyme
2 teaspoons fine sea salt
1 teaspoon black pepper
Remaining ingredients
8 large chicken thighs – overlapping skin trimmed
5 medium Yukon Gold potatoes – peeled, cut into large chunks, and soaked in water then dried
1 sprig fresh oregano – optional, for garnish
5 slices lemon – optional, for garnish

I made this after seeing the video in my feed this morning. Everyone cleaned their plate. In my case, the potatoes did need more time to cook. I also did the garlic and green beans. It was delicious!

One of the most delicious chicken dishes I've made in along time. Absolutely delicious. I didn't have bone-in thighs but did have boneless/skinless and substituted those. Also had to reduce the 375 degree roasting time. I used a remote wired thermometer set for 185F and the doneness was perfect. Didn't have Yukon Gold potatoes. Used what the market called "yellow potatoes" and they had to roast a lot longer because the chicken cooked that much faster than the bone-in thighs would have taken. Thank you for sharing this.

I made this today 2-15-2025. It was awesome!! I halved the recipe because it’s just me. It was delicious. I disagree with James on the bone in – boneless thighs. I used bone in and the skin was crispy, meat tender. I marinated it for 16 hours.
