In celebration of a decade of their London restaurant OPSO, Chef Nikos Roussos and Andreas Labridis are set to launch their first cookbook titled OPSO: A Modern Greek Cookbook on November 7th, 2024. 

The restaurateurs, known for their innovative approach to Greek cuisine, have compiled over 80 recipes that reflect their culinary journey. These include OPSO’s signature dishes, seasonal specials, and Greek favourites infused with a contemporary twist. The cookbook is structured into eight chapters, beginning with the Greek Larder, which focuses on small plates ideal for sharing, an essential element of Greek dining culture. Other chapters cover a wide range of themes from Salads and Vegetables to Meat Feasts, Seafood from the Greek Coasts, Barbecues, Brunch Dishes, Breads, Pastries, Desserts, and Sweet Treats.

The recipes range from simple traditional dishes like Feta Kataifi, Souvlaki, and Dolmades to more complex projects for the ambitious home cook, such as Octopus Stifado, Lamb Shank with Trahanas, and Smoked Tomato Lobster. The dessert section contains innovative creations like Baked Feta Cheesecake and Olive Oil Macarons. The book also features some of OPSO’s popular brunch offerings including Village Eggs and Greek yoghurt delicacies.

Throughout the cookbook, Roussos and Labridis share personal anecdotes and insights, offering readers a deeper understanding of their connection to Greek gastronomic traditions and its influence on their professional lives. “We’re thrilled to celebrate this decade of our restaurant OPSO, by creating and launching our first book on Modern Greek food. Over the past few months, we’ve been excited to prepare this cookbook, featuring a selection of favourite recipes and dishes adapted for home cooking, and we can’t wait for everyone to experience the flavours of modern Greek cuisine in their own kitchens,” the duo stated.

This launch marks a milestone year for the chefs who have significantly influenced London’s food scene since opening OPSO in 2014. Their contributions extend beyond the restaurant to include Pittabun, a street food-inspired venue, and Kima, a modern Greek seafood restaurant emphasizing fin-to-gill cooking. Additionally, with the recent opening of OPSO in Doha in spring 2024, Roussos and Labridis continue to broaden their culinary impact beyond the UK.
