Here is Greece’s answer to the frittata. This is a very easy and crazy good recipe for spaghetti sfoungato. The original sfoungato recipes come from Crete but I just added a little flare of my own here. I used left-over spaghetti with meat sauce but you can easily follow my recipe if you don’t have left-overs. Whether you call this sfoungato, frittata or even quiche, this is surely going to quickly become a favourite for sure. Try it today, love it forever…

I'm Greek and I've literally never heard of this dish
Can I use fresh cooked pasta, because I don’t have any leftovers, and if I can do I let it cool before adding to my pan ?

I use zucchini instead of eggplant because i dont like eggplant. This is very Italian too. I love making this. I use basil instead of dried parsley. I think i called it spaghetti pie when i made it.
Its a sin to waste food…………………………Except when my mother in law tried to cook for us. That was the time to go out side, get a shovel, and bury the crap. And then order Chinese!
