GTS Episode 02: Greek Meatloaf

Fusion cooking continued as we make an American meatloaf with the flavors of a classic Gyro.

Meatloaf Recipe:

1 lb ground beef
1 lb ground lamb
2 eggs
1 red onion
3 cloves garlic
2 tbs each ground rosemary, thyme and tarragon
1 cup breadcrumbs
salt and pepper
olive oil

1) Preheat oven to 350 degrees F
2) Finely Dice red onion and peel 3 cloves of garlic
3) Place onions in a mixing bowl, and grate garlic overtop ( I use a microplane in the video)
4) Add 1lb beef, 1lb lamb, spices, breadcrumbs and add S&P to preference.
5) Mix by hand until homogenous.
6) Coat a deep baking (loaf) pan with olive oil and fill with mixture to the top, smoothing the surface with your hands.
7) Bake for 1 hr, and serve after resting for 15 minutes. Optionally, when it cools completely, you can slice it and reheat in a high heat pan to add a crust to the outside. Top with sauce recipe below.

Tzatziki sauce:

1/2 cup greek yogurt
1 bunch dill
1 cucumber
half a lemon
salt and pepper

1) Peel and deseed 1 cucumber, then finely dice it.
2) Finely chop 1 bunch of fresh dill.
3) Add yogurt, cucumber, and dill to a small bowl. Squeeze the juice of one half lemon over the mixture and stir to combine. Add Salt and Pepper to taste.
