Mixing sweet and savory spices is totally medieval, yet it has tomato??? They wouldn't have had tomatoes in medieval times. The rest of the world has divided the spices but not the Indo-Europeans. They still want to mix coriander and cinnamon. YUK
Great work and skill, excellent presentation. I do wonder whether the generous sprinkle of salt at the very start doesn 't draw moisture from the meat. So I 'm follwing this recipe, adding the salt later.
I have heard that the easiest way to peel small shallots is to plunge them in/ pour over boiling hot water (like you do with tomatoes) then plunge them in ice cold water and…Bob’s your uncle.

Really chef, if you want a proper Stifado you have to add a couple of little blue pills. It doesn't help the taste but the overall experience is much more satisfying.

This is hands down my favorite! I love stifado bc it works with any kind of meat. My yia yia used rabbit A LOT. But you can really use venison, chicken, veal or pork. Thanks Chef for your version 🙂
Cincinnati style chili was actually adapted from this recipe. If you've never had it, I highly recommend it.
