Best simple Greek garlic sauce recipe

2 Large potatoes peeled and cut into small cubes
7 garlic gloves
1/2 teaspoon salt
1 fresh lemon juice
1 cup olive oil

Cover potatoes with water in a sauce pan, bring to a boil over medium heat, simmer until potatoes are tender 20 to 25 minute, drain wait until cool.

In a food processor or blender combine potatoes garlic, lemon juice salt, process until smooth,
slowly add 1/2 cup of olive oil, until mixture is process, add remaining of olive oil to make it creamier.
You can dip the sauce, which carrots celery, pita bread.
